Method
- Preheat your oven to 350°F and line two baking sheets with parchment paper.
- In a medium bowl, mash the ripe bananas with a fork until mostly smooth.
- In a large bowl, beat the softened butter with both sugars until light and fluffy.
- Beat in the egg and vanilla extract, then fold in the mashed bananas.
- In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.
- Add the dry ingredients to the wet ingredients and stir just until no flour streaks remain. Fold in chocolate chips or nuts if using.
- Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 11-13 minutes until the edges are set and lightly golden. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
Make sure your bananas are very ripe for the best flavor. These cookies freeze well, so consider making a double batch.
