Ingredients
  

  • 2 cups dark chocolate chips, divided
  • 4 tablespoons unsalted butter, room temperature
  • 1 cup granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • ½ cup all-purpose flour
  • ¼ cup unsweetened cocoa powder
  • ½ teaspoon baking powder
  • ¼ teaspoon salt

Method
 

  1. Preheat your oven to 350°F. Line two baking sheets with parchment paper or silicone mats.
  2. Melt 1 cup of the dark chocolate chips with the butter. Set aside to cool slightly.
  3. In a large mixing bowl, whisk together the sugar and eggs until pale and slightly thick.
  4. Add the vanilla extract and the melted chocolate mixture to the egg mixture. Whisk until combined.
  5. In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt. Fold the dry ingredients into the wet ingredients.
  6. Fold in the remaining cup of chocolate chips.
  7. Drop rounded portions of dough onto prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes. The edges should look set while the centers remain soft.
  9. Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

The chocolate is the star ingredient; use high-quality chocolate with at least 60% cacao content. Measure flour correctly by spooning it into the measuring cup. Store cookies in an airtight container for up to 5 days.
