Ingredients
  

  • 1 cup unsalted butter, room temperature
  • ½ cup granulated sugar, plus extra for sprinkling
  • 2 cups all-purpose flour, spooned and leveled
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract (optional)

Method
 

  1. Preheat your oven to 325°F. Line two baking sheets with parchment paper.
  2. In a large bowl, beat the room-temperature butter and sugar together until just combined.
  3. Add the vanilla extract and salt. Mix briefly to incorporate.
  4. Add the flour all at once and mix gently until the dough just comes together.
  5. Turn the dough onto a lightly floured surface and gently pat it into a disk about ¾ inch thick.
  6. Cut shapes with a cookie cutter or slice into rectangles. Transfer cookies to prepared baking sheets.
  7. Prick each cookie several times with a fork and sprinkle the tops lightly with granulated sugar.
  8. Bake for 18-22 minutes until the edges turn barely golden. Let cookies cool on the baking sheet for five minutes before transferring to a wire rack.

Notes

Use high-quality, room temperature butter for best results. Handle the dough minimally to keep cookies tender. Store in an airtight container for up to two weeks.
