Ingredients
  

  • 1 pound rotini or penne pasta
  • Cherry tomatoes
  • Bell peppers
  • Red onio
  • Cucumber
  • Salami, grilled chicken, or chickpeas
  • Cubed cheddar or provolone
  • 3/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 2 tablespoons Dijon mustard
  • 2 minced garlic cloves
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

  1. Cook the pasta in heavily salted water for one minute less than package directions.
  2. Shock the pasta in an ice bath for 30 seconds, then drain and cool completely.
  3. Dice the vegetables into uniform pieces.
  4. Whisk together the dressing ingredients until well combined.
  5. Combine the cooled pasta, vegetables, protein, and cheese in a large bowl, then toss with the dressing.

Notes

Make ahead for better flavor. Store in an airtight container in the refrigerator for up to 4 days.
