Ingredients
  

  • 1 pound boneless, skinless chicken thighs or breasts
  • 1/4 cup olive oil
  • 2 tablespoons fresh lemon juice
  • 2 cloves minced garlic
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumi
  • 1 tablespoon honey
  • Salt and black pepper to taste

Method
 

  1. Cut chicken into 1 to 1.5 inch pieces.
  2. Combine olive oil, lemon juice, garlic, smoked paprika, cumin, honey, salt, and pepper in a bowl to create the marinade.
  3. Marinate chicken pieces for at least 30 minutes, preferably 2 to 4 hours.
  4. Preheat grill to medium-high heat (400-450°F).
  5. Thread chicken onto skewers or grill directly on grates.
  6. Grill chicken for 3-4 minutes on each side until internal temperature reaches 165°F.
  7. Let chicken rest for 5 minutes before serving.

Notes

Ensure chicken pieces are uniform in size for even cooking. Use a two-zone fire on the grill for optimal results. Serve with a variety of dipping sauces.
