Ingredients
  

  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup light brown sugar, packed
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 cup unsalted butter, softened (for filling)
  • 1/3 cup honey
  • 1/4 cup powdered sugar
  • Pinch of salt (for filling)

Method
 

  1. Step 1: Beat the softened butter with honey, powdered sugar, and salt until smooth and fluffy. Freeze for at least 2 hours.
  2. Step 2: Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Add eggs one at a time, then mix in vanilla extract.
  3. Step 3: Whisk together flour, baking soda, and salt. Gradually add to the wet ingredients, mixing just until combined.
  4. Step 4: Refrigerate the dough for 30 minutes.
  5. Step 5: Preheat oven to 350°F. Scoop about 2 tablespoons of dough, flatten it, place a frozen honey butter disc in the center, wrap the dough around it, and roll into a ball.
  6. Step 6: Place on baking sheets, spacing them 3 inches apart. Bake for 12-14 minutes until edges are golden.
  7. Step 7: Cool on baking sheet for 5 minutes before transferring to a wire rack.

Notes

Make sure to freeze the honey butter solid to prevent leaking during baking. Store cookies in an airtight container for up to 4 days.
