Ingredients
  

  • 4 cups mashed potatoes
  • 3 cups cooked chicken, shredded or diced
  • 2 cups frozen corn, thawed and drained
  • 2 cups chicken gravy
  • 2 cups shredded cheddar cheese, divided
  • 2 tablespoons butter
  • 1/2 cup sour cream, optional but recommended
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/4 cup green onions, for garnish

Method
 

  1. Preheat your oven to 350°F. Grease a 9x13-inch baking dish with butter or cooking spray.
  2. Warm the mashed potatoes slightly in the microwave. Stir in the butter, sour cream, garlic powder, and half of the shredded cheese. Season with salt and pepper.
  3. Spread the mashed potatoes evenly across the bottom of the prepared baking dish.
  4. Layer the cooked chicken evenly over the mashed potatoes and season lightly with salt and pepper.
  5. Spread the corn evenly over the chicken layer.
  6. Pour the gravy evenly over the corn layer.
  7. Sprinkle the remaining cheese over the top.
  8. Cover the dish with aluminum foil and bake for 25 minutes. Then remove the foil and bake for an additional 15-20 minutes.
  9. Remove from the oven and let the casserole rest for 5-10 minutes before serving.
  10. Garnish with chopped green onions and serve hot.

Notes

Gather your ingredients before you start. Use rotisserie chicken for a shortcut or make your own crispy chicken tenders for extra crunch. Leftovers reheat beautifully.
