Ingredients
Method
- Preheat your oven to 350°F. Grease a 9x13-inch baking dish with butter or cooking spray.
- Warm the mashed potatoes slightly in the microwave. Stir in the butter, sour cream, garlic powder, and half of the shredded cheese. Season with salt and pepper.
- Spread the mashed potatoes evenly across the bottom of the prepared baking dish.
- Layer the cooked chicken evenly over the mashed potatoes and season lightly with salt and pepper.
- Spread the corn evenly over the chicken layer.
- Pour the gravy evenly over the corn layer.
- Sprinkle the remaining cheese over the top.
- Cover the dish with aluminum foil and bake for 25 minutes. Then remove the foil and bake for an additional 15-20 minutes.
- Remove from the oven and let the casserole rest for 5-10 minutes before serving.
- Garnish with chopped green onions and serve hot.
Notes
Gather your ingredients before you start. Use rotisserie chicken for a shortcut or make your own crispy chicken tenders for extra crunch. Leftovers reheat beautifully.
