- Preheat your oven to 350°F and line two baking sheets with parchment paper.
- In a large bowl, cream the softened butter and sugar together until light and fluffy.
- Beat in the egg, lemon zest, lemon juice, and vanilla extract until fully combined.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients and mix until no flour streaks remain.
- Scoop rounded tablespoons of dough, roll them into balls, and coat in granulated sugar.
- Place on prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes until edges are golden and centers look slightly underdone.
- Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
