Method
- Preheat your oven to 375°F. Line two baking sheets with parchment paper.
- Whisk together the flour, baking soda, cinnamon, ginger, cloves, and salt in a medium bowl. Set aside.
- In a large bowl, beat the softened butter and one cup of sugar together until light and fluffy.
- Add the egg and molasses to the butter mixture. Beat until completely combined.
- Gradually add the dry ingredients to the wet ingredients. Mix until just combined.
- Chill the dough for fifteen minutes.
- Roll the dough into balls about 1½ inches in diameter. Roll each ball in the extra granulated sugar until coated.
- Place them on the prepared baking sheets, spacing them about three inches apart.
- Bake for 10-12 minutes. The cookies will look slightly underdone when you remove them.
- Let the cookies cool on the baking sheet for five minutes before transferring to a wire rack.
Notes
Use fresh spices for the best flavor. Don't skip the chilling step to prevent excessive spreading. Measure flour correctly to avoid dry cookies.
