Ingredients
  

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 teaspoons pure vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt

Method
 

  1. Beat the softened butter and sugar together in a large bowl using an electric mixer on medium speed for about 3 minutes until light and fluffy.
  2. Add the egg and vanilla extract to the butter mixture and beat until completely combined and smooth.
  3. In a separate bowl, whisk together the flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until the flour disappears into the dough.
  5. Divide the dough in half and shape each portion into a flat disc. Wrap in plastic wrap and refrigerate for 30 minutes.
  6. Preheat your oven to 350°F and line two baking sheets with parchment paper.
  7. Roll one dough disc to about ¼-inch thickness and cut shapes with cookie cutters. Transfer to the baking sheets.
  8. Bake for 8-10 minutes until the edges just barely begin to turn golden.
  9. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely before decorating.

Notes

Measure flour correctly by spooning it into your measuring cup and leveling it off. Keep your dough cold while working to prevent spreading.
