Method
- Season the beef generously with salt and pepper on all sides.
- Optional: Sear the beef in a skillet over high heat until browned on all sides.
- Place chopped onions in the bottom of the slow cooker.
- Add the beef on top of the onions.
- Arrange carrots and potatoes around the meat.
- Tuck whole garlic cloves throughout the vegetables.
- In a bowl, whisk together beef broth, red wine, tomato paste, Worcestershire sauce, thyme, and rosemary.
- Pour the mixture over everything in the slow cooker.
- Cover and cook on low for 8 hours or on high for 4-5 hours until the meat shreds easily.
Notes
Avoid adding too much liquid, resist lifting the lid during cooking, and let the roast rest for 10 minutes after cooking.
