Ingredients
  

  • 1½ cups crushed graham crackers
  • 5 tablespoons melted butter
  • 2 tablespoons granulated sugar (for crust)
  • 16 oz cream cheese, room temperature
  • ¾ cup powdered sugar
  • 2 teaspoons vanilla extract
  • 1 cup heavy whipping cream, cold
  • 2 cups fresh strawberries, sliced or diced
  • 2 tablespoons granulated sugar (for berries, optional)
  • 1 tablespoon lemon juice

Method
 

  1. Prepare the crust by crushing graham crackers and mixing with melted butter and sugar. Press into cups and refrigerate.
  2. Beat cream cheese until smooth, then add powdered sugar and vanilla extract. Mix until combined.
  3. Whip heavy cream until stiff peaks form.
  4. Fold whipped cream into cream cheese mixture gently.
  5. Spoon cheesecake filling into crusts and refrigerate for at least 3 hours.
  6. Prepare strawberries by tossing with sugar and lemon juice, letting sit at room temperature.
  7. Top each cup with macerated strawberries before serving.
