  • 4 cups powdered sugar
  • 6-8 tablespoons warm water
  • 1/2 teaspoon pure vanilla extract

Method
 

  1. Combine meringue powder and warm water in a bowl and let sit for 2 minutes.
  2. Add sifted powdered sugar and vanilla extract, then mix on low speed.
  3. Increase speed to medium-high and beat for 5-7 minutes until thick and fluffy.
  4. Test consistency for stiff peaks.
  5. For flooding consistency, add water gradually to a portion of icing.
  6. Cover bowls with damp towels to prevent crusting.

Notes

Keep icing covered to prevent skin formation. Use squeeze bottles for flooding. Store unused icing in an airtight container in the refrigerator for up to two weeks.
